{a dinner from the garden}


Is there anything better than fresh vegetables from the garden? We have started enjoying the results of all of our (my husband's) hard work, and tonight we had the most fantastic dinner, with all the components coming from our garden.

This dish is delicious--roasted red peppers, potatoes, onion, and garlic, tossed with olive oil and seasonings. Whether you get them from your garden, the farmer's market, or the grocery store, you will love it!

Roasted Garlic Potatoes with Red Peppers & Onion


  • Scrub your potatoes, pat dry, then cut into cubes. Lay them out on a cookie sheet, covered in aluminum foil.
  • Cut the red pepper and onion into pieces--slightly bigger than bite-size. Add them to the potatoes on the cookie sheet.
  • Toss the vegetable mixture with olive oil, coating well. Add chopped garlic, salt, pepper, and garlic powder to taste.
  • Bake in a preheated 425 degree oven, until potatoes are golden brown, about 45 minutes. Turn them over about halfway through, to ensure even cooking.
