{citrus white chocolate cookies}


When my friend showed up on my doorstep with these cookies, it was like a little piece of springtime heaven had entered my house. I knew I had to have the recipe, and make them as soon as possible!

I wanted to divide the dough into thirds, and make lime, lemon, and orange cookies, but I was out of all my limes and lemons, and since it was 10:30pm, I decided to do them all orange. I can't wait to try it though! I had extra white chocolate chips leftover, since I didn't use the whole bag, so I melted it then piped it across the top of the cookies, finishing with extra orange zest. You certainly don't have to do that part--they are yummy either way!

These cookies would be delicious anytime, but perfect for spring and Easter. How fun to serve at your Easter brunch, to take to a classroom, or serve at any gathering. I could seriously eat the whole batch....

Citrus White Chocolate Cookies


1 c. butter
½ c. white sugar
½ c. brown sugar
1 egg
2 ¼ c. flour
¾ tsp. baking soda
½ tsp. salt
2 T. grated orange peel (about 2 large oranges)
1 ½-2 c. white chocolate chips

Mix butter and sugar until creamy. Beat in egg. Add the rest of the dry ingredients and mix. When you get a dough consistency, mix in the orange peel and chocolate by hand. You could easily substitute lemon peel or lime peel instead of the orange for a fun variation. Bake 10-12 minutes at 350 degrees. Cool on a wire rack. Makes approx. 40 small cookies or 20 large cookies.
