{four layer dessert}

I first discovered this recipe when we were in college, and I fell in love with it right then and there. I love all the layers--individually, and together!  The shortbread crust is nutty, rich, and buttery, and when it's paired with the delightful cream cheese and pudding layers, it's pure heaven.  The whipped cream  is the perfect's so, SO yummy!  I really could eat the whole pan.  :)

I used pistachio pudding in honor of St. Patrick's Day, and it will be perfect for our dessert on Saturday night.  Not a pistachio fan?  Not to worry--I LOVE it with lemon pudding, and the chocolate is delicious too.  I've also made it without the nuts, so if you have nut allergies at your house, or you just don't like them, you can still try it and love it!

{four layer dessert}

¾ c. butter
1 c. chopped walnuts
1 ½ c. flour

Layer 2:
8 oz. cream cheese, room temperature
1 c. powdered sugar
½ large container Cool Whip

Layer 3:
2 (3 oz.) packages instant pudding
3 c. cold milk

Layer 4:
½ pint heavy cream
¼ c. powdered sugar
1 tsp. vanilla

Combine crust ingredients, and press into a buttered 9x13 baking dish. Bake at 325 degrees for 20 minutes, then let cool. Beat the cream cheese until smooth, and then add the powdered sugar. Fold in the Cool Whip until it’s completely incorporated, then spread the mixture on top of the cooled crust. Mix pudding and milk until thick, and then spread on top of the cream cheese layer. Beat the heavy cream until it reaches a soft peak stage, then add the powdered sugar and vanilla. Spread on top of the pudding layer. Sprinkle with nuts. Refrigerate until time to serve.

I've only made it with chocolate pudding--love the idea of using pistachio for St. Patrick's Day.

I was introduced to this by my husband's family. It's definitely one of his favorite desserts. They call it "Heavenly Hash".

I made this for a friend after she had a baby. She begged me to share the recipe and now makes every excuse to have it around every couple of months.
On a side note - my recipe uses pecans. It enhances the shortbread taste. Might be something for walnut haters to try.
