{cinnamon chip cookies}

Cookies are always a huge hit at our house, and I love to take one of my favorite basic dough recipes, and do something a little different with it.  The other day I sent one of my kids to the storage room to grab white chocolate chips, and he came back empty-handed.  I almost always have them on hand, so it took me by surprise at first, and then I decided to alter my plans and try something new.  I'm so glad I did--these cinnamon chip cookies are delightful! We added a new favorite to our cookie list!


{Cinnamon Chip Cookies}

1 c. butter
1/2 c. white sugar
1/2 c. brown sugar
1 egg
2 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
2 c. cinnamon chips

Mix butter and sugar until creamy.  Beat in egg.  Add the rest of the dry ingredients and mix well.  The dough is thick, so don't worry!  It means that these cookies won't spread--and will stay where you put them! Add the cinnamon chips and mix well.  You could add some cinnamon to the dough if you wanted to--I didn't, but it would probably add even more of that cinnamon flavor.  Bake 10-12 minutes at 350 degrees.  Do not overbake!  Drizzle the cinnamon glaze on top.

Cinnamon Glaze

2 c. powdered sugar
1/4-1/3 c. whole milk
1 tsp. vanilla
1- 1 1/2 tsp. cinnamon

In a medium bowl, whisk the sugar and milk until smooth.  I like a thicker glaze, so I use less milk (I start with even less than 1/4 c.), but you can make it as thin or as thick as you like.  Add the vanilla and cinnamon and mix well.  The cinnamon is also to taste--start with a little, and add a little more if you need to.  Drizzle over the cookies!

P.S. I've been able to find the cinnamon chips at Walmart--not every store here has carried them.
