{oh what do you do in the summertime} the girl who ate everything

Hi, I'm Christy from The Girl Who Ate Everything and I'm excited to be here today. Thanks Kierste!

I'm The Girl Who Ate Everything which means I didn't earn my name from watching my calories and nibbling on a celery stick here and there. I've eaten my fair share of desserts and brownies, but LEMON brownies are totally intriguing and new to me. For some reason lemon flavored treats are a surprisingly polarizing topic on my site; people either love them or hate them. I happen to love them! These lemon brownies aren't just a little lemony. These are packed full of lemon flavor. They have a sweet lemon brownie base with a tart glaze on top. They kind of reminded me of Lemonheads candy that I used to eat by the pool when I was little.

{trifle in a jar...berries with lemon cream}

Fresh berries are one of my absolute favorite things, and the epitome of summer. I think I adore blackberries the most, but I waver whenever I taste raspberries!   I love to serve berries after dinner, and mason jars is a really fun way to present them. 

When I'm feeling extra fancy, I make them into a trifle, using a quick and simple lemon cream.  It takes just minutes to make, but adds an incredible creaminess and a sweet complement to the tartness of the berries.  If you're looking for a yummy dessert to serve to family, friends, or other company, this is definitely one to try!

{clipboards + wipes cases = easy coloring kits for kids}

Our family will be getting on a plane this week and flying to our new home!  It will also be the first time that all seven of us will fly together, and with four little ones, I've been trying to think of different ways I can keep them all occupied for the trip.  

One of the things that I've always had in our church quiet bag is a clipboard or two.  I love them for kids, because they fit perfectly in their laps, give them a hard surface to write on, and keeps their paper or coloring page still and in one place.  

As I was brainstorming ideas, I realized that a clipboard for each of their backpacks would be perfect, and then I could stick them in our church bag after we arrived.  Next step...something to color with!  I love using an empty wipes case to keep crayons or colored pencils in. They are just the right size, and it's so easy to have one for each child (plus, it cuts down on any arguing over them). Add the clipboards and wipes cases together, and you've got easy coloring kits for kids!

{ruffled ribbon flag tees}

I wanted to make a fun tee for my girls to wear on the 4th of July, and I needed it to be quick and simple.  I just had a couple more days before my sewing machine would be packed away, and I didn't have a lot of time to work on it.  So, I grabbed two spools of ribbon, some thread, and grey tee shirts I found at Walmart for $3.  Less than 30 minutes later, I had two darling shirts, ready to celebrate in!

{stars & stripes oreos}

I am CRAZY about the 4th of July.  I love every bit of it--the fireworks, parades, BBQs, colors, flags--and of course, we can't forget the food! 

These darling Stars & Stripes Oreos really could not be more simple, and are SO fun!  My kids loved helping with these, and eating them even more.  They will be a perfect addition to our Independence Day celebration!

{happy father's day: extreme six-layer bars}

In honor of Father's Day, I'm sharing my hubby's favorite treat, and his request for today.  I call them {Extreme Six-Layer Bars}, because I took my regular recipe, double pretty much everything, but put them in the same size pan.  This means they turn out extra gooey and thick, chock full of chocolate chips, butterscotch chips, and nuts.  The reason they're six-layer, and not the traditional seven?  No coconut at this house!  (You could always add it in if you like it...)

{vtech kids switch & go dinos: product review}

This post brought to you by VTechKids. All opinions are 100% mine.

I was recently asked to review a new VtechKids product, or rather, my boys were.  :)  Just opening the box was exciting for them, but when they saw the Switch & Go Dinos  Silver, The T-Rex Dino and Horns, The Triceratops Dino, it was all over. My hubby literally could not get them out of their boxes fast enough, and my boys fell in love with them immediately.  They are actually clutching them in their beds right now, fast asleep!

{a weekly summer schedule}

Today is the last day of school, and excitement is in the air!  My kids all love school, but can't wait to be home for the summer. I usually thrive on a schedule and a regular routine, but I also love the freedom that summer provides. (Pajama days, anyone?)

We usually let loose the first week, and just enjoy being home, but then I've found that we all do better with a basic summer schedule in place.  We know what to expect, the kids always have something to look forward to, and it means that we get to try new things each week. I also hope that with a big move coming up in a couple of weeks, this routine will help make the adjustment a little bit easier when we get there.

{yummy marinades, rubs, & recipes for summer grilling}

 One of THE best things about summer is grilling!  There probably are only a handful of nights the entire summer that we don't put our grill to good use.  It just can't be beat--for so many reasons.  It doesn't heat up the house, and mixing up a marinade and pouring it over meat takes all of about 5 minutes.  The prep time is short, and honestly, everything is better when it's grilled!  Grilling is also a very healthy way to prepare meat and vegetables, and I love that I can prepare delicious meals for my family that are good for them.

I love trying new marinade recipes, and I've been on the search lately for a few ones to try that I want to share with you. I've included many basic recipes, and some other fun ones, too.

{peanut butter no-bake cookies}

No-bake cookies are a most definite hit at our house, especially over the last couple of weeks.  I think we've made them at least 5 times!  My regular recipe came from our early married college years, given to me by one of my good friends.  It has remained my favorite no-bake recipe to this day!

Today for our Sunday treat, once again everyone wanted no-bake cookies (my little boys call them cuckoos, lol).  After a brilliant suggestion from my mom, I switched out the white sugar for brown sugar, omitted the cocoa, and ended up with the most delicious peanut-buttery, melt-in-your-mouth cookies!  We will absolutely be making this version again!
