{peanut butter no-bake cookies}

No-bake cookies are a most definite hit at our house, especially over the last couple of weeks.  I think we've made them at least 5 times!  My regular recipe came from our early married college years, given to me by one of my good friends.  It has remained my favorite no-bake recipe to this day!

Today for our Sunday treat, once again everyone wanted no-bake cookies (my little boys call them cuckoos, lol).  After a brilliant suggestion from my mom, I switched out the white sugar for brown sugar, omitted the cocoa, and ended up with the most delicious peanut-buttery, melt-in-your-mouth cookies!  We will absolutely be making this version again!


If you've never made no-bake cookies before, now is the time to try them!  They are really easy to make, the ingredients are standard pantry items, and they come together in less than 10 minutes.  This means they are a great go-to treat, whether it's something to enjoy at home, or when you are running short on time and need something quick!

{Peanut Butter No-Bake Cookies}

2 c. brown sugar
4 T. butter
1/2 c. half & half (or milk)
3/4 c. peanut butter
1/4 tsp. salt
1/2 tsp. vanilla
3 c. oats

Boil first three ingredients, then remove from the stove.  Add salt, vanilla, and peanut butter, then stir until they are completely incorporated.  Stir in the oats.  One of the keys to nice and soft no-bake cookies is not add too many oats.  It leads to harder, crumblier cookies, so I always add my oats 1/2 c. at a time, stir well, then add another 1/2 cup. The mixture will harden once it's cool. Drop by spoonfuls onto wax paper. Store leftovers in an airtight container.

Okay, what did you do? My son and I made some yesterday afternoon and now we are addicted. :) Thanks for the yummy recipe. I love peanut butter, so this was a big hit! Plus, how quick and easy are these cookies!
