{lemon cream cake}

I'm just going to preface this by saying that this is EVER.  I got the recipe from a friend several years ago, and it has been my absolutely favorite ever since.  Every time I've made it, or been at a gathering where it's been served, it's a hot commodity, and the recipe is widely requested.  I especially love it because it's so easy to make, even though it doesn't look like it!  

Whether it's for a birthday party, baby or bridal shower, summer picnic, or any other gathering, it's a sure-to-please dessert that will leave your guests clamoring for more!

{Lemon Cream Cake}


1 white cake mix  (I'm a Duncan Hines girl, and I also like it with French Vanilla)

Make and bake as directed in 2 nine-inch cake pans.

Lemon filling:

1 8 oz package cream cheese, softened
2 c. powdered sugar
1/4 c. lemon juice
1 c. heavy cream

In a medium-size bowl, combine cream cheese and 2 cups powdered sugar with an electric mixer until smooth. Mix in lemon juice.

In a large bowl with an electric mixer on high, whip cream until stiff peaks form. Using a spoon, fold cream cheese mixture into the whipped cream; set aside.

Crumb topping:

1/2 c. flour
1/2 c. powdered sugar
1/4 c. cold butter
1/2 tsp. vanilla

In a medium-size bowl, combine flour and 1/2 cup powdered sugar. Add butter and dribble in the vanilla extract. Cut cold butter into flour mixture until mixture is in pieces no larger than a pea. Refrigerate until ready to frost cake.

Assembling the cake:

 When the cake is completely cool, spread about half of the filling on the bottom half of the cake. (You can tell how much you'll need...) Place the second half on top. Frost the top and sides of the cake with the rest of the Lemon Cream Filling. Cover the top and sides of the cake with the Crumb Topping, pressing it onto the sides to cover. Refrigerate for at least 3 hours. Cut into slices and dust with powdered sugar.

Does this cake have any frosting on it besides the lemon filling? It looks like it in the it a buttercream frosting or something more fancy?

Is that reserved 1/2 cup correct? It doesn't seem like a 1/2 cup would frost the entire cake?

Some Lucky Dog---YAY! So glad you loved it!!

Jen--nope, it's just the lemon filling! It does have the topping on it too--the crumbly stuff, that makes it look more fancy.

Yellow Grandma--You know, that's how I got the recipe, but I never follow that kind of stuff, lol. I just used it all to frost the whole cake, and it was plenty for the middle, top, and sides.
